Kyoko has been in operation for 30 years in several different locations. It has been in its current location, in Fayetteville, for 12 years. When I went there for the first time yesterday, I didn't really know what to expect. They didn't have a website and I couldn't find a menu online. But I was pleasantly surprised. I ordered a ten piece sushi omakase -- &ldquo;chef&rsquo;s choice&rdquo;-- with a tuna roll and a bowl of miso soup. I also ordered one piece of uni (sea urchin roe). Along with the order Chef Honda also gave me two pieces of his marinated torched salmon belly. Everything was delicious, but the salmon belly and the uni were amazing. Also another standout was the masago (smelt roe) topped with a quail egg. But the best thing about this restaurant is Chef Honda. &nbsp;Typically when you go to a sushi restaurant, it is more of a transaction. &nbsp;By that I mean, you go in tell the chef what you want, he makes it and you eat it. &nbsp;But at Kyoko, a lot of the time, you get to talk to Chef Honda who will answer any question you have and take special requests you have as well.
